summer pork recipe which takes hardly any time to prepare

4 Pork Loin Chops removed from bone and sliced in half
200 ml light soy sauce
100 g brown sugar
2 cloves garlic, crushed
5 g ground ginger
5 g ground cumin
Small finely chopped red chilli

Mix all ingredients for marinade cover the pork loin slices and leave to marinade for about an hour

Pineapple Salsa
320gm finely chopped fresh 150gm tablespoons finely chopped spring onion
70gm finely chopped red pepper,
10gm finely chopped fresh coriander
1 tablespoon honey
2 teaspoons finely diced chilli pepper
juice of 1 fresh lime

Mix all ingredients together in bowl cover with cling film and place in fridge for at least an hour.

When everything is ready and has been marinated heat a heavy cast iron griddle pan then on it, cook the pork loin slices with some olive oil, turning so they are nicely browned on both sides and cooked through to the middle.

Serve on a selection of Curly Kale Packchoi Spinach washed and trimmed of stalks then steamed over salted water for 5 minutes. Top with pineapple salsa.
