Whirly Wine
Sitting in Quince, a superb restaurant in San Francisco just before Easter 2005 bought it all home to me. Tasting a half bottle of Willamette Valley Pinot Noir from Oregon with some Riedel Burgundy Grand Cru glasses, I found myself “ Whirling “ the wine frantically and excitedly at great speed, and with such great, deep glasses there was not a chance of any being spilt!
In order for a wine to qualify as a “ Whirly Wine” this is the kind of passion and joy I need to feel about the wine. In the nineties I spent seven years managing Bibendum restaurant, where, working with one of the best wine lists and menus in the UK, I learnt the importance of matching food and wines and how much fun this can be. In 1999 I left to work a vintage in Barossa, South Australia and travel the vineyards of Australia in an old Ford Falcon Station wagon, from Mudgee, New South Wales across to The Great Southern and Margaret River vineyards of Western Australia. This “hands on” experience was paramount in understanding the extraordinary range of varietals available in Australia as well as the amazing quality of wines coming out of these individual vineyards.
